Easy and fast:
- Muesli with chopped cupuacu
- Porridge with cupuacu pieces
- A mix of nuts and cupuacu
Chocolate- Cupuacu brownies
- 250 g dark chocolate
- 150 g butter
- 170 g sugar
- 3 eggs
- 60 g flour
- 80 g cupuacu pieces
- 90 g cashew nuts in pieces
Melt chocolate with butter in bain marie ( a pot above boiling water )
Cut the cupuacu in small pieces and add it in the chocolate while melting
Beat sugar with eggs then add flour.
Mix all the ingredients together with cashew nuts pieces.
Pour it in a rectangle baking tray or other shaped tray.
Cook for 45 min at 160 degrees C.
Cool it down and Bon appetit!
Ps: this cake is good the next day,the cupuacu has time to diffuse its perfume.
Creme Brulee Coco Cupuacu
- 2 eggs
- 4 egg yolks
- 55 g sugar
- 400 ml coconut cream
- 400 ml liquid cream
- 60 g cupuacu pieces
- 2 teaspoon brown sugar
Serves 8 people
Mix all eggs and sugar together.
Mix creams together and warm it up with cupuacu pieces. Let it infuse.
Pour the cream over the eggs and stir well.
Put it back on the stove on low heat and continue to stir. It should thickened a bit.
Take 8 ramequins and pour the liquid into it.
Put the ramequins in an another dish and pour water in the dish,to cook it in bain marie
Cook for 25 min or until the preparation is firm in 150 degres C oven.
Let it cool down and enjoy it
Pastry cream with cupuacu
- 250 ml organic milk
- 5 pieces of cupuacu
- 3 egg yolks
- 75 g sugar
- 30 g flour
Warm up milk with cupuacu,do not boil.
Beat eggs with sugar,add flour.
Pour the milk over the egg mixture. Cook it over low heat until thickened.
This recipe is for everything, from stuffing up a sponge cake to filling pastry choux
Financier cupuacu
- 6 egg whites
- 185 g melted butter
- 125 g ground almond
- 240 g icing sugar
- 75 g flour
- 80 g cupuacu pieces
- Icing sugar for decoration
Oven at 200 degres C.
Beat egg whites with a fork in a bowl.
Add the rest of the ingredients and mix with a wooden spoon.
Pour the mix in the mould ( Flexipan mould is ideal ).
Cook for about 25 min.
Cool it down and put icing sugar on it for deco.
Ps: I love it with chocolate ganache on top!
Chocolate cupuacu ganache
- 500 ml liquid cream
- 500 g dark chocolate n small pieces
- 10 pieces of cupuacu cut small
Put cream into a pot (bain marie) with cupuacu and heat until boiling.
Add chocolate to it and stir it to melt in the hot cream.
It should become like a nice velvet texture of chocolate.
The ganache is the staple for truffles,chocolate sauce and quick chocolate decoration.
